Carrot delite(burfi) is sweet dessert,easy to prepare and children will love to eat.it contains nutrients Since it is made up of carrot and ghee.

Ingredients
- Carrot 400 gram cut pealed pieces
- 1/3 cup Corn flour
- Water
- Half cup Sugar
- 2 spoon cashew powder/ badam powder.
- 2 tsp ghee
- Sugar powder/ coconut crumps
Method
- For carrot pure
- In a pressure cooker add water,put steamer vessel in it put carrot pealed, close the lid and remove 2 whistle.
- When it is soft cooked transfer carrot into blender and blend into smooth puree
- Filter out smooth carrot puree in a vessel.
- Add half cup sugar,1/3 cup corn flour, cashew powder/badam, water 1 cup Wix and mix it properly to make smooth consistency.
- On medium flame cook carrot mixture,when it start thickening into silky texture
- Add 2 tsp ghee and mix well kerp cooking till it gets thickening
- When the mixture start seperated from pan transfer it to bowl or square vessel.
- Level up and keep it to set gor 1 hour
- After 1 hour when it is set completely cut into pieces and roll into coconut crumps or sugar powder.
- Enjoy the sweet carrot burfi.as sweet dish after meal.
