vegetable soup recipe

Ingredients

For making soup
  • 2 small onion chopped
  • 1 tomato chopped
  • 1 carrot chopped
  • 1/2 beet chopped
  • 1 small piece Ginger grated
  • 4 cloves of garlic chopped
  • 1 cube maggie
  • 1bay leaf
  • 1 stick of cinnamon
  • 1 tsp pepper powder
  • salt as per taste
  • 1 medium packet maggie noodles
  • water
  • maggie masala optional
  • 4 tsp of ghee

Method
  1.  Clean all veggies and chop them very finely.
  2. Heat a Kadai, add half-filled water in it, when it gets boil to add 1 tsp oil,1/2 stick of cinnamon, 1 bay(tej patta) leaf in it keep it for 5 min to boil, later add noodles in it, cook till noodles get half cooked.
  3.  Remove the kadi and strain the noodles in a strainer, keep the stock of noodles to add it while preparing soup.
  4.  For making soup keep Kadai on gas add 3 tsp of ghee in it add ginger, garlic chopped piece, cinnamon, pepper powder, fry till it becomes golden brown, add chopped onion in it fry till it becomes golden brown, add maggie cube and maggie masala(optional). keep mixing in between with a spatula.
  5. At last add, all the chopped veggies in it fry for 5 min and add water and 1/2 cup noodles stock as per your Kadai size.
  6. Cook till all the veggies get cooked.
  7.  Serve hot in a bowl with cooked noodles in it.
