Brinjal potato mix bhaji is a combination of two major ingredient brinjal and potato, serve with roti or chapati.

Ingredients
- Brinjal cut pieces
- Potato cut pieces
- Tomato 1/2cut into pieces
- Green chilli
- 1tsp chilli powder
- 1tsp coriander powder
- 1 tsp garam masala (optional)
- 1/2tsp turmeric powder
- 1tsp cumin seeds
- 1tsp mustard seeds
- Salt to taste
- Oil
Method
- Since potato is difficult to boil, cut into small pieces and keep aside
- Heat a pan add oil once it is heated add mustard seeds and cumin seeds let it sputter
- Add all masala let it cook on the low flame when the oil separates from masala add cut pieces of potato mix well and cook,
- Add little water cover lid and cook on low flame.
- When potato half cooked add brinjal pieces mix well, add tomato and green chilli.add water if required.
- Atlast add salt as per taste.
- Serve hot with chapati or roti
