Brinjal potato mix bhaji recipe

Brinjal potato mix bhaji is a combination of two major ingredient brinjal and potato, serve with roti or chapati.

Ingredients
  • Brinjal cut pieces
  • Potato cut pieces
  • Tomato 1/2cut into pieces
  • Green chilli
  • 1tsp chilli powder
  • 1tsp coriander powder
  • 1 tsp garam masala (optional)
  • 1/2tsp turmeric powder
  • 1tsp cumin seeds
  • 1tsp mustard seeds
  • Salt to taste
  • Oil
Method
  1. Since potato is difficult to boil, cut into small pieces and keep aside
  2. Heat a pan add oil once it is heated add mustard seeds and cumin seeds let it sputter
  3. Add all masala let it cook on the low flame when the oil separates from masala add cut pieces of potato mix well and cook,
  4. Add little water cover lid and cook on low flame.
  5. When potato half cooked add brinjal pieces mix well, add tomato and green chilli.add water if required.
  6. Atlast add salt as per taste.
  7. Serve hot with chapati or roti
